We run our freeze dryer 7 days a week. Not only did we make up the front end cost in the first year, we get to be in charge of the quality of food, and instead of buying whatever the lead freeze dry food companies sell, we get to produce all and only the foods we enjoy. We focused primarily on protein and exotic fruits or veggies we can't grow in our climate. After we stocked up on those big ticket items, we simply make a super large meal every 2 days and freeze dry the portion we don't eat !

Yogurt, sour cream, milk, and ice cream do amazingly well.

Only tip I have, don't try it on butter. If you want shelf stable butter, can it.
